To help guests stay refreshed at home, Pastry Chef Ashutosh Gairola shared four home-friendly recipes straight from his personal playbook. While these specific creations are not served on property, Chef Ash designed them to help home cooks transform simple, store-bought ice cream, celebrating our partnership with the iconic Thrifty Ice Cream, into sophisticated summer centerpieces.

1. The 2-Ingredient Crème BrĂ»lĂ©e “Hack”

The secret to a flawless crème brûlée is a rich, egg-heavy custard base. Because premium ice cream is essentially a frozen custard, melting it down and re-setting it lets you entirely skip the temperamental water-bath baking process. Classic Thrifty Vanilla Bean is ideal for this because it gives you those gorgeous, authentic vanilla flecks and a velvety texture without the traditional fuss.

  • Yield: 2 ramekins

  • Ingredients: 2 generous scoops (approx. 1 cup) Thrifty Vanilla Bean ice cream; 1 tbsp granulated sugar

2. Deconstructed Skillet Apple Pie Ă  la Mode

Baking a whole pie from scratch in the peak of summer is a big ask. This deconstructed version delivers all the deeply comforting, aromatic elements of a classic apple pie, with warm, caramelized fruit and a buttery texture, but takes less than fifteen minutes in a single skillet. Topped with a pint of Thrifty’s Old Fashioned Vanilla, the temperature contrast of hot, spiced fruit against cold ice cream is unmatched.

  • Yield: 2-3 servings

  • Ingredients: 2 large Honeycrisp apples, peeled and sliced; 2 tbsp unsalted butter; 2 tbsp brown sugar; 1/2 tsp ground cinnamon; pinch of sea salt; 1/3 cup crushed shortbread cookies; Thrifty Vanilla Bean or Old Fashioned Vanilla ice cream

3. Artisanal Cookie Sandwiches

A truly great ice cream sandwich should be perfectly balanced, not just overwhelmingly sweet. Instead of warming up your house to bake cookies, pairing rich chocolate chunks from high-quality, pre-baked chocolate chip cookies with a pint of Thrifty Mint Chocolate Chip or Rocky Road creates an elevated childhood favorite ready in minutes.

  • Yield: 4 large sandwiches

  • Ingredients: 8 high-quality chocolate chip cookies; 1 pint of Thrifty ice cream (Mint Chocolate Chip or Rocky Road); flaky sea salt

  • Prep & Slice: Ensure your cookies are completely cooled or slightly chilled. For a clean, professional pastry-chef look, leave the pint of ice cream inside its cardboard container and use a sharp chef’s knife to slice cross-sections directly through the packaging. Simply peel away the cardboard ring to reveal a perfect round disc of ice cream.

  • Assemble & Freeze: Sandwich the ice cream disc neatly between two cookies, press down gently, and immediately roll the exposed ice cream edges in a touch of flaky sea salt. Wrap tightly in parchment paper and freeze for 20 minutes to set completely before serving.

4. The Summer “Entremet” Ice Cream Cake

In professional pastry kitchens, entremets are prized for their clean, structured, elegant layers. This recipe is a simplified, frozen take on that classic French concept. We layer a textured cookie crust, a smooth ice cream center, and a bright, acidic summer berry coulis to slice through the dairy’s richness. Grab a couple of pints of Thrifty Strawberry or Vanilla Bean to create an impressive centerpiece.

  • Yield: 6-8 servings

  • Ingredients: 1 1/2 cups crushed graham crackers; 5 tbsp unsalted butter, melted; 1.5 quarts Thrifty ice cream (Strawberry or Vanilla Bean), slightly softened; 1 cup fresh raspberries or blackberries; 1 tbsp sugar; 1 tsp fresh lemon juice

Instructions

  • The Base & Fruit: Mix graham cracker crumbs and melted butter. Press firmly into the bottom of an 8-inch springform pan and freeze for 10 minutes. In a small bowl, gently mash the fresh berries with the sugar and lemon juice until it becomes a vibrant, saucy consistency.

  • Layer & Deep Freeze: Smooth half of your softened ice cream over the frozen crust. Spoon half of the berry coulis evenly over it. Add the remaining ice cream layer, then drop dollops of the remaining berry coulis on top. Gently drag a butter knife through the surface to create an elegant fruit swirl, then freeze for at least 4 hours until completely solid. Run a warm knife around the edge of the pan to cleanly release before slicing.
