Pumpkin pie is a holiday favorite, but what makes a truly exceptional slice? At La Quinta Resort & Club, Executive Sous Chef Ashutosh Gairola shares a few of his favorite baking secrets to help bring this Thanksgiving classic to the next level.
The Secret Is in the Texture
For Chef Ashutosh, the perfect pumpkin pie starts with a silky, custard-like filling and just the right balance of warm spices. Freshly grated nutmeg, ginger, and a touch of cardamom add depth without overpowering the pumpkin’s natural sweetness.
His secret? Cook the pumpkin purée in a saucepan over medium heat for 8–10 minutes before preparing the filling. This removes excess moisture and concentrates the flavor, creating a smoother, richer custard.
And when it comes to baking, don’t wait for the center to become completely firm. A gentle wiggle means the pie is ready to come out of the oven, allowing the residual heat to finish the job.
A Buttery Crust That Stays Crisp
A great filling deserves an equally delicious crust. Chef Ashutosh recommends using chilled European-style butter and ice-cold water for a flaky pastry.
To prevent a soggy bottom, fully blind-bake the crust before adding the filling. His favorite trick is brushing the baked shell with a thin layer of egg white and returning it to the oven for 90 seconds. This creates a protective seal that helps keep the crust crisp.
A Little Something Unexpected
For a more memorable pumpkin pie, Chef Ashutosh likes incorporating brown butter for its toasted, nutty flavor, along with a splash of dark rum or bourbon. Replacing traditional sugar with dark muscovado or jaggery adds a subtle caramel richness that complements the seasonal spices.
Another professional tip? Treat pumpkin pie like a delicate custard. Gently infuse warm cream and milk with spices before mixing, and bake at approximately 325°F for a smooth, velvety finish.
The Perfect Finishing Touch
While freshly whipped cream will always be a classic, Chef Ashutosh prefers something a little more creative. Bourbon Chantilly cream or spiced chai cold foam adds an unexpected twist, while candied pumpkin seeds with sea salt and smoked paprika bring a delightful crunch.
